Cotton Soft Japanese Cheese Cake

I made this cotton cheese cake for baking partners group created by Swathi .The cake is very moist and melts in to your mouth like that itself.Thanks to Reeni for choosing this cake.Here goes the recipe.. 

Ingredients:

    Fine granulated sugar-140grams
    Egg whites-6
    Egg yolks-6

    Lemon juice-1/2tbsp
    Cream of tartar-1/4tsp
    Butter-50grams
    Cream cheese-250grams
    Fresh milk-100ml
    Cake flour (here i used  plain flour)-60grams
    Corn flour-20grams
    Salt-1/4tsp


Preparation:

 Preheat the oven at 160°C.
Melt cream cheese, butter and milk over a double boiler. Cool the mixture. Fold in the flour,  the cornflour, salt, egg yolks,lemon juice and mix well.
 

Whisk egg whites with cream of tartar until foamy. Add in the sugar and whisk until soft
peaks form.
Add the egg whites to the cheese mixture  and fold well. Pour into a 8-inch round spring form cake pan ,lightly grease and line the bottom and sides of the pan with greaseproof baking paper.   
  
Cover the cake pan bottom sides with silver foil  2-3 times  in order to prevent water going into the pan.
 
Bake cheesecake in a water bath for 1 hour 10 mins or until set and golden brown at 160°C.

Leave to cool in the pan for few minutes.

Cut a slice and enjoy moist and delicious cake.

Spicy Eggplant Rings

Today i made a very easy and crispy,delicious eggplant rings.Actually i used aubergine here,because i don't get eggplant very well here.But you can use normal eggplant.Here goes the recipe.. 


Ingredients:

Eggplant/aubergine-1large
Red chilli powder-1/2tsp
Coriander powder-1/2tsp
Turmeric powder-1/4tsp
Hing-a pinch
Sujji/Rava-2tbsp
Gram flour-2tbsp
Salt to taste
Oil for shallow frying



Preparation:

Wash and chop eggplant into rings.Apply salt lightly to both sides of the rings.
Mix chilli,coriander,hing and turmeric powder.Apply this mixture to the rings both sides.
In another bowl,mix rava and gram flour.Coat the eggplant rings nicely in the mixture and shallow fry on medium heat till they turn into golden colour on both sides.Transfer them on to a kitchen towel to absorb any excess oil and enjoy crispy,yummy eggplant rings..

Prawn Pakoda

Just now i prepared this prawn pakoda for my dinner along with sambar and rice.I prepared this pakoda just in 10minutes it is very very easy.My kids have eaten this pakoda for the first time and they liked it very much.Here i used store brought cooked prawns,but you can use fresh one's also.Here goes the recipe..


 Ingredients:
 Prawn-300grams(stored brought cooked one's)
 Ginger garlic paste-1tsp
 Chilli powder-1tsp
 Coriander powder-1tsp
 Garam masala-1/2tsp
 Corn flour-2tbsp
 Gram flour-3tbsp
 Turmeric powder-1/2tsp
 Chopped coriander-2tbsp
 Salt to taste
 Oil for deep frying

Preparation:

Wash the prawns and dry it them on a kitchen  towel.Add turmeric and little salt to it and mix well.Heat a pan with oil  for deep frying,fry the prawns in batch till they change into light brown colour .Transfer them into a bowl,to this prawns add ginger garlic paste,coriander,chilli and garam masala powder.Mix well.Now for the binding add gram flour and corn flour.Add chopped coriander leaves and salt to taste.
 Note: Add salt less because we have already added salt while frying,so check and add salt.

Now combine every thing nicely so that prawns are coated well.Deep fry the prawns in oil till they turn into golden colour.Transfer them into a serving bowl and enjoy tasty,crispy and delicious pakoda.
