Potato Jackets

I made this potato jackets for my weekend.It tasted delicious with cheddar cheese and yogurt.Kids enjoyed it very well.

Ingredients:

Baking potatoes-2nos
Onion-1nos,chopped
yogurt-3tbsp
Cheddar cheese-2tbsp
Salt to taste
Olive oil-2tbsp
Pepper powder-1tsp

Preparation:

Preheat the oven 160C fan.
Prick the potatoes with a fork and apply oil,salt and pepper allover to it and place it in the oven for 1hour or until cooked.
Heat a pan with oil and fry the onions for 2 minutes.
Halve the potatoes and scoop the flesh into a medium bowl, leaving the skins intact. Mash the flesh with the yogurt,onions and season.
Pile the mixture back into the potato skins. Place on a baking tray return to the oven to heat through and lightly crisp, about 20 minutes.
Then transfer into a serving bowl and add cheddar cheese and top and enjoy it.

Egg Pulao

I made this egg pulao for our Sunday's lunch.It came out delicious and its very easy to prepare.We had it with onion raitha.


Ingredients:

Eggs-4nos (boiled and shell peeled)
Basmati rice-2cups
Ginger garlic paste-1 1/2tsp
Tomato-1big
Onions-2nos(sliced)
Whole masalas (3 sticks cinnamon,3to4 pods cardamom,6to7
Black pepper corns-4to5
Cumin seeds-2tsp
Red chili powder-1tsp
Turmeric powder-1/2tsp
Coriander leaves.
Garam masala powder-1tsp.
Ghee-3tbsp
Salt to taste


Preparation:

Wash and soak rice for at least 15minutes.

Heat ghee in a pan,add whole masalas,and onions,saute till onion light brown.
Then add chopped tomato,ginger,garlic paste,red chili powder.Mix it for 2 sec, add boiled eggs, garam masala powder ,salt and coriander leaves, mix slowly to avoid breaking.Lower the heat ,cover and cook for 1 min.

Remove eggs from masala and keep aside.
Pour3cups of water, increase heat, when it starts boiling, add washed rice, mix it, lower the heat to medium and cook till rice almost done and water dried up.
Add eggs. Mix it slowly .
Then cover with foil and put into preheated oven for 20minutes at 150 degree till rice well cooked.
Serve hot with onion raitha.

Apple Milkshake

Yesterday i made this apple milkshake.when i went into my kitchen i found a bunch of apple lying idle in there place.Then i got the idea of making this milkshake along with vanilla ice cream.Kids liked it very much of course ice cream is every one's favourite,especially for kids.So they enjoyed it very well.


Ingredients:


Apple-4nos(peeled and chopped into cubes)
Milk-1cup
Sugar-1/2cup
Vanilla ice cream-2scoops

Preparation:


Pop all the ingredients into a blender and run it for just 3 to 4minutes.Then transfer into a serving glass and enjoy tasty n chill apple milkshake.

Prawn korma

Yesterday i made this prawn korma for my lunch.It came out really delicious.First time i prepared this korma with prawns.we had it with rotis and rice.Here goes the recipe..

Ingredients:

Prawns-300grams

Fried onion paste-1/2cup
Ginger-garlic paste-1tsp
Garam masala-1tsp
Curd-1/2cup
Coriander powder-11/2tsp
Turmeric powder-1/2tsp
Cashew nuts paste-2tbsp
Coriander leaves
Oil-2tbsp
Salt to taste

Preparation:

Marinate prawns with curd, salt, ginger-garlic paste, garam masala, turmeric powder for 15 Min's.

Heat pan with oil, put fried onion paste and coriander powder and fry for 2 minutes.Then add cashew paste and fry for a minute.
Add prawn with marinade and fry well.Then add a little water if you want the gravy more.Add required salt and cook for 10minutes.

Finally garnish with chopped coriander and serve with rotis or rice.

Egg Masala (Version-2)

Today i made this Egg masala using coconut and fennel seeds paste.It came out really well.Its quite easy to prepare.It can be serves with rice or chapati.Here goes the recipe..


Ingredients:

Boiled eggs-4nos(remove the shell and cut it into halves)

Chili powder-2tsp

Coriander powder-2tsp
Cumin powder-1tsp

Ground pepper powder-1tsp

Ginger garlic paste-11/2tsp

Chopped onions-1no

Chopped tomatoes-2nos

Coconut+fennel seed paste-1cup

Coriander & curry leaves

Turmeric powder-1/2tsp

Lemon juice-1tsp

Mustard seeds-1tsp

Oil-1tbsp

Water-2cups

Salt to taste


Preparation:


Boil the eggs 7 Min's.Keep aside.

Heat a Pan with oil and fry mustard seeds, fennel seeds, chopped onions, chopped tomatoes and curry leaves .


Add chili powder,coriander powder,cumin powder, turmeric powder,ginger-garlic paste and required salt one by one in order and saute well.
Add grated coconut paste and cook for 5 Min's or till oil separates from the gravy.

Add egg slices and and pour 2 cups of water and close the lid of the pan.
Cook it for 5 minutes. Then remove the pan from the flame and keep it aside. Add chopped coriander leaves and lemon juice and cook for 2 minutes. Serve hot with rice or chapati.

Baked Rainbow Trout Fish

First of all Happy Vinayaka chavithi to all my friends.As i went to India for 2months to attend my brother's marriage.I couldn't post any recipe in my blog for last three months.After coming from India also i was not feeling very well due to some health problem,so i was not able to post any recipes these days.But today i decided to post the recipes again.Today i baked the trout fish for our Sunday Lunch,kids enjoyed it very well.These days my first one is liking fish very much than chicken.so we started bringing fish more than chicken.


Ingredients:

Rainbow Trout Fish-1whole

For Marination:

Coriander powder-1tsp
chili powder-1/2tsp
Lemon juice-1tsp
Olive oil-2tsp
Paste of 4 garlic pods and 2tbsp of coriander leaves.
Turmeric powder-1/2tsp
Salt to taste


Applying masala to the fish

Masala applied fish.

Baked Rainbow Trout Fish


Preparation:

Clean the fish and tap with tissue paper to absorb the water.

Mix all the ingredients under marination and apply to the fish inside and outside.

Place it in a baking tray and again sprinkle some oil on the top and cover it with silver foil.Keep aside it for at least half an hour.

preheat the oven to 200degrees and place this baking tray and remove the silver foil and bake it for half an hour.

Once the fish on the top turn into brown colour,turn it to another side and bake it for another 15mints.Overall it takes 45minutes to cook.

Once it is completely baked removed from the oven and allow it cool.Then serve the tasty n yummy baked fish with onion rings.
