Prawn Dum Biryani

First time i made this prawn Biryani,which i have adapted from Kitchen Secrets.My little one enjoyed it very much.Even hubby dear told it came out perfectly and we had it with onion raitha.Here goes the recipe..

Ingredients:

For Marination:

Prawn-400grams
Ginger garlic paste-1tsp

Red chilli powder-1/2tsp

Lemon juice-11/2tsp


For Masala :
Onion- 2 nos.
Tomato- 2 nos.
Green chillies- 1nos.
Ginger garlic paste-1 tsp
Orange color-1/2 tsp
Cinnamon -1 inch piece
Cardamom - 2 nos.
Cloves - 2 nos.
Bay leaves - 1 no.
Turmeric powder-1/2tsp
Salt to taste
Ghee-1tbsp
Oil-2 tbsp

For Cooking Rice:

Basmati rice -2cup
Cloves -2nos.

Cardamom - 2 nos.
Cumin Seeds - 1 tsp
Cinnamon - 1 in piece
Bay leaves - 1 no.
Oil - 1 tsp
Salt to taste

Preparation:

For Marination :

Take a bowl,add the ingredients under marination and mix well.Marinate it for half an hour.

For Masala :

Take a pan,add both ghee and oil together. Add the cinnamon,cloves,cardamom fry for few minutes. Then goes the chopped onions and fry till they change there colour.

Then add ginger garlic paste and saute well.Add the tomatoes and cook until the tomatoes are totally cooked.Then add the turmeric powder and the marinated prawn mixture into this and saute well.Add chopped cilantro leaves and mix well. Cook this mixture until prawn is cooked well.

For Rice :

Wash and Soak the rice for 10 minutes. Then take a bottomed big vessel and fill it with 3/4 of water and boil the water.Add oil and all the garam masalas.Add the rice slowly and cook for exactly 5 minutes i.e is 3/4th cooked.Drain the water.

Take the nonstick pot and add half the prawn masala and then add the half of hot steaming rice straight after draining . Top the rice with another layer of the remaining prawn mixture and then followed by remaining hot rice.Drizzle the food colour on the top of the rice. Cover the vessel with a thick cotton cloth and seal it. Close the lid very tightly . Heat a dosa pan and place the pot on top and cook for 15 minutes. Make sure no steam escapes while cooking.. Remove the lid and by using the fork mix the rice gently without breaking it and have it.

Serve delicious n mouthwatering prawn Biryani with onion raitha.

Mudda Pappu

Today i prepared this Mudda Pappu for my little one.He enjoyed it very much along with rice and ghee.I love this pappu along with mango pickle.In Andhra it is very famous and is served in festivals in every home.Here goes the recipe..

Ingredients:

Toor dal-1cup
Turmeric a pinch
Cumin seeds-1tsp
Oil-1/2tsp
Hing a pinch

Preparation:

Clean the dal and pop it in pressure cooker along with hing,turmeric and oil.Cook for 3to 4 whistle.

Once pressure cool down ,add required salt and cumin seeds and smash the dal with wooden spoon.

Transfer into a bowl and serve with rice and ghee.

Chicken65

I made this Chicken 65 on Sunday for my lunch.I tired and taste this recipe from Divya's Recipes.It came out really very well and tasted delicious.Here goes the recipes..

Ingredients:

Boneless chicken-250 grams
Corn flour-2tbsp
Maida/All purpose flour-2tsp

Ajinomoto a pinch

Soya sauce-2tbsp

Red chili powder-1/2tsp
Pepper powder-1/2tsp

Food colour a pinch

Egg-1no.

Salt to taste

Oil for deep frying


For Seasoning:

Slit green chillies-2to 3nos
Chopped garlic-1tsp

Curry leaves

Curd-2tbsp
Food colour a pinch

Oil-2tbsp



Preparation:

Take bowl and mix the ingredients under marination and keep it in fridge for 4to 5hours. Once the time is done.

Heat Pan with enough oil for frying the chicken pieces.Fry the chicken pieces in batch until they turn into golden colour.Place them on kitchen towel to excess oil.


Heat a wok or pan with oil,add slit green chillies,chopped garlic and curry leaves. saute them for few mints,then goes the curd and food colour.Mix them well and then goes the fried chicken pieces.Cook till the chicken pieces completely absorbs the curd.Once it is ready,garnish with chopped coriander leaves and serve hot hot chicken 65.

Mango Kalakand In Microwave

Today i have tried and tasted this Mango Kalakand in Microwave from Priya of Priya's Easy N Tasty Recipes.It came out really delicious and every one in my home enjoyed it very much.Here goes the recipe..

Ingredients:

Ricotta cheese-1cup
Sugar-1cup

Mango pulp-1/2cup

Milk powder-2cups

Chopped pistachios

Rose water-1/2tsp

Butter-1tbsp

Preparation:

Take a microwave safe bowl,add all the above ingredients expect chopped pistachios.Fold them nicely in a such way that it looks like a cream.Pop the bowl in microwave at full power for 20minutes,Stirring at every 5minutes,because it doubles in its volume.

At nearly 17 minutes,add the chopped pistachios and you will also seen the edges of the bowl and the mixture would have turned light golden colour.
Once the time in done,now transfer the mixture onto a flat plate and allow it to cool.Once it cool downs cut into pieces and enjoy..

Onion Bajjis

It has been a week i wrote a post.These days i am very much occupied by two kids.These days they started fighting for the same items.Even though my second one is very small but he frightens his sister very much.And from yesterday i was little afraid of my blog when i saw it was not opening.But today morning only i felt some what good after seeing that it is a problem for very one.Coming to the recipe i made onions Bajjis in a different way compare to our regular ones.I used plain flour and eggs in it,they are really very good and very soft.Here goes the recipes..

Ingredients:

Onions-3nos big
Plain flour-1cup
Baking powder-1tsp
Chili powder-1tsp
Chopped coriander -2tbsp
Eggs-2nos
Water
Turmeric powder-1/2tsp
Salt to taste
Oil for deep frying

Preparation:

Chop the onions into rings and keep aside in a bowl.

Take a small bowl,add all the above ingredients expect oil and onions and mix well.
Now pour this mixture on onions rings which are kept in another bowl.Mix well.

Heat a pan with enough oil for deep frying the bajjis.Drop the bajjis in batch with a spoon and fry them till both side turns into golden colour.Place them on kitchen towel to absorb excess oil.


Then serve the onion bajjis like that or with any chutney.

Sorakaya Kura/Bottle Gourd Curry

Sorakaya curry is very famous in Andhra.Today i made this curry along with lentils which i have seen in you-tube and prepared it.Here goes the recipe..


Ingredients:

Bottle gourd/sorakaya-1medium nos
Chili powder-1/4tsp
Cumin seeds-1tsp
Chana dal-1cup
Amchur powder-1tsp
Garam masala-1/2tsp
Chopped onions-1small nos
Red chillies-2nos
Turmeric powder-1/4tsp
Curry leaves
Chopped coriander
Oil-1tbsp
Salt to taste

Preparation:

Clean and cut the sorakaya into cubes and keep aside.
Soak chana dal in water for half an hour.

Heat a pressure cooker with oil,add cumin seeds,red chillies,curry leaves,grated ginger and fry them.Then add chopped onions and fry them till they turn into golden colour.

Then drain the water from the Dal and pop it into pan and stir well,add chopped sorakaya along with turmeric and salt and a cup of water.Pressure cook it for 2whistles.

Once pressure cools down add garam masala and amchur powder and mix well.Finally garnish with chopped coriander leaves.Transfer it into a serving bowl and serve it with rotis or plain rice..

Jeera Aloo

Today i have prepared this easy and tasty Jeera Aloo in Microwave.It takes 20mints to prepare and it is very very easy.Here goes the recipe..

Ingredients:

Potatoes-250grams
Chili powder-1tsp
Coriander powder-1tsp
Cumin seed powder-1/2tsp
Cumin seeds-1tsp
Turmeric powder-1/2tsp
Oil-1tbsp
Salt to taste

Preparation:

Wash the potatoes and peel the skin.And then cut the potatoes into lengthwise and soak them in water.

Take a microwave safe bowl and add the chopped potatoes without water into it.
Add all the spices along with salt and oil and toss them nicely.

Microwave it for 12minutes on full power.But for every 4minutes mix them well and again pop them in microwave.Once its done garnish with chopped coriander leaves and serve with rice /rotis..
