Cabbage Pakoda

Yesterday evening i made these Cabbage Pakoda.The weather is very cold and its was raining from two days.So i thought of making something crispy and simple for this cold weather.Then immediately i prepared this Fritters.You don't believe it takes just 15minutes to prepare,my two kids loved it very much and they finished it in fraction of minutes.Here goes the recipe..

Ingredients:

Cabbage-150grams
Gram flour-1/2cup
Rice flour-2tbsp
Ajwain seeds-1tsp
Chili powder-1tsp
Salt to taste
Oil for deep frying

Preparation:

Chop cabbage into lengthwise and wash it.Take a bowl and add the chopped cabbage along with gram flour,rice flour,chili powder,ajwain seeds and required salt.Mix well and don't add any water.

Mean while heat a pan with required oil for frying these fritters.Once the oil is really hot take 2tbsp of oil from it and pop it in the cabbage mixture and mix well.

Now drop the Cabbage mixture with hand or spoon into small pieces and fry them till they turn into golden colour and crispy.Transfer them on to a kitchen towel to absorb any excess oil.

Then enjoy eating crispy and yummy Cabbage Pakoda.

Suruttai Poli

I made this suruttai Poli long back from Nithya of 4th Sense cooking.Which is entirely different from the regular poli.It came out very well and tasted delicious.Its very simple to prepare and we can do when ever we want something different from the usual one's.Here goes the recipe..

Ingredients:

For Making Poli(outer wrap)

Maida (all purpose flour) - 1 cup
Salt - a pinch
Oil - for frying

For filling :

Roasted gram - 1cup
Sugar - 1cup
Cashews - 20
Cardamom powder - 1tsp
Coconut - 1 tbsp
Ghee - 1tsp

Preparation:

Making powder for filling:

Take a blender and make powder of roasted gram and sugar together.Then Cut the cashews into small pieces.
Heat a pan with ghee and roast the chopped cashews and coconut for few minutes.
Take bowl and mix all the above ingredients.Keep it aside.

For making outer wrap:

Take a bowl and mix all ingredients under making poli.Add water little by little and make like a chapati dough.Leave it aside for 10 to 15 minutes.

Divide the dough into small balls and roll them into thin circles like poori's.Heat a pan with enough oil for frying the poori's.Then deep fry them in hot oil and remove them when they are half cooked.Remove them from oil,immediately spread 1tbsp of filling on the circles and roll them tight and keep on a plate with side facing down.

Allow them to cool for at least 10 minutes and then enjoy tasty n delicious Suruttai Poli.

Cardamom Bun

Today i prepared this Cardamom bun,which i have seen in Good food channel.It came out very well and tasted delicious.Its very to prepare.I have done few changes according to my taste and prepared it.Here goes the recipe..

Ingredients:

Egg-1nos
Cream fraiche-200ml tub
Caster sugar-175grams
Plain flour-225grams, sifted
Bicarbonate of soda-1/2tsp
Pinch of salt
Grounded cardamom seeds-1tsp
Chopped nuts-2tbsp


Preparation:

Preheat the oven to 180 C . Grease the sides of a 8inch tin and dust with flour; line the base of the tin with a disc of greaseproof paper.

Whisk the egg in a large bowl. Add cream fraich and the sugar and whisk to combine. Add the sifted flour and bicarbonate of soda , then the salt and the ground cardamom. Fold the mixture to combine.

Transfer into the tin,and sprinkle the chopped nuts on the top and place in the oven. Cook for about 35 minutes until the top of the cake just feels firm to the touch and a skewer inserted into the the centre comes out clean.

Remove from the oven and let it sit for 10 minutes before removing from the tin and cooling on a wire rack.

cut into pieces and enjoy with a cup of coffee.

Masala Vaada

Hi Friends for the last week i can't post any recipes.As i was not feeling well due to severe cold and cough.And i was not able to sit in front of the system and write the post.Today feeling much better than last week.I prepared this Masala Vaada on Sunday morning for my breakfast along with idly and sambar which is very famous in Andhra.In Every hotel they serve Vaada with idly and sambar.Here goes the recipe..

Ingredients:

Channa Dal-1cup
Dry red chilies-4nos
Grated ginger-1tsp
Chopped onions-1cup
Chopped coriander leaves-2tbsp
Turmeric a pinch
Salt to taste
Oil for deep frying

Preparation:

Wash and soak Dal for 3to 4hours.Once time is done.Drain the water from the Dal.

Pop Dal and all the above ingredients expect oil in a mixer.Grind them into a coarse paste don't make the paste smooth.Transfer the paste into a bowl.

Heat a pan with enough oil for deep frying these vaadas.Take the paste like a lemon size ball and
press them between your palms and fry them in oil on medium flame till they turn into crispy on outer side.Repeat the process for the entire paste and fry them in batch's.Transfer them on to kitchen towel to absorb excess oil.

Enjoy eating tasty tasty vaada with idly -sambar or like it self.

Tandoori Chicken Roast

On sunday i made this Tandoori Chicken roast for my lunch.First time i made it and it came very well and tasted delicious..

Ingredients:
Whole chicken -1 small

For marination:
Curd/yoghrt-1cup
Chili powder-1tsp
Coriander powder-1tsp
Garam masala-1tsp
Cumin seeds powder-1tsp
Ginger garlic paste-1 1/2tsp
Lemon juice-3tsp
Pepper powder-1tsp
Oil-2tbsp
Fried onions-1/2cup
Salt to taste
Preparation:

Clean the chicken and make slits using knife to whole chicken.
Rub Salt and pepper to the chicken inside and outside.

Take a bowl,mix all the ingredients under marination and mix well.Rub this mixture to the chicken well i.e every where with out leaving space(inside n outside).Cover it with cling fing and keep it in fridge for overnight.

Before cooking in the morning remove the chicken from the fridge atleast half an hour before.
Remove the cover and place it in a baking tray and cover it with foil.

Pop it in preheat oven at 200Fan for 1 1/2 hour.check it after 45mints and again pop it in oven and bake it for another 45mints.

Once cooked remove it and leave it to cool for 10 mints and then cut it and enjoy eating tasty n yummy whole chicken.

Quesadillas stack

I made these Quesadillas with tomato and onions.They came very delicious,i tried using chopped onions and tomatoes with some spices.Here goes the recipe..

Ingredients:

Wheat flour tortillas-2nos
Cheddar cheese-1/2cup
Finely chopped onions-1medium nos
Finely chopped tomatoes-1medium nos
Chili powder-1/2tsp
Pepper powder-1/2tsp
Salt to taste
Oil-1tbsp

Preparation:

Heat a pan with oil,add chopped onions,tomatoes along with salt and fry till are cooked.Then add chili and pepper powder and mix well.Keep aside.

Heat heavy frying pan, and warm one of the tortillas in the hot pan. While still on the heat, spread the cooked mixture and then sprinkle with grated cheese, before covering with the other tortilla.

After a few seconds, the cheese should begin to melt and the tortilla on the bottom of the pan turn golden brown. Flip it over and cook the other tortilla. Transfer to a plate, cut in wedges and serve straight away.

Chocohotpots

The moment i saw this chocohotpots in Aipi's blog USMASALA.I was very tempted and bookmarked it.But i could not do on the same day as i did not had ramekins .So last week i brought them and made it immediately and it was very delicious especially the upper crust is very crunchy.Thanks Aipi dear for sharing such a delicious dessert.


Ingredients:

Semi sweet choco chips-40z and 1 stick of black chocolate
Butter-1/2cup
Instant coffee powder-1/2tsp
Vanilla essence-1tsp
Eggs-2nos
All purpose flour-3tbsp
Caster sugar-3/4cup
Salt a pinch
Preparation:

Preheat oven to 175degree fan with baking tray.

Take a microwave safe bowl,add choco chips,balck chocolate along with butter and melt them and keep aside to cool.

Take a bowl ,add eggs,sugar and whisk it nicely.Then pop it with flour,salt and vanilla essence and again mix it well.

Now add melted choco-butter mixture and mix well without any lumps.

Grease the ramekins and divide the mixture equally into the cases and bake it for 20 mints in middle rack.When you see the top is cracked it means it is cooked.Remove and allow it to cool for few seconds.Then enjoy eating delicious chocohotpots.

Bread Bonda

Today i prepared this Bread Bonda for my evening snack.As i wanted to make quick snack for the evening to the kids.I preferred this one for making.It is very easy to prepare and consumes less time.Here goes the recipe..

Ingredients:

Bread slices-4nos
Boiled potatoes-2nos
Chopped onions-1cup
Chopped green chili-1nos
Ginger garlic paste-1tsp
Salt to taste
Gram flour-1cup
Rice flour-3tbsp
Chili powder-1tsp
Oil for deep frying

Preparation:

Take a bowl,add bread slices,boiled potatoes,ginger garlic paste,chopped onions and green chilis along with salt.Mix them all and make into small balls and keep aside.

Take another bowl,add gram flour,rice flour,chili powder and salt along with required water to make a thick batter like we make for bajji's.

Then heat a pan with oil,dip the balls inthe batter and fry them in oil on medium flame till they turn into Golden colour.Place them on a kitchen towel to absorb excess oil.Then transfer into a serving bowl and enjoy with tomato ketchup or with any chutney.

Almond Brittle With chocolate

Today i made These Almond Brittle with chocolate which i have seen in Good food channel.These are very simple to prepare and we can have it with coffee or after meal also.Here goes the recipe..

Ingredients:

Roasted almond flakes-150grams
Butter-100grams

Water-100ml

Golden caster sugar-200grams

Milk chocolate bar-150grams


Preparation:

Heat a pan,add butter then followed water and mix well till butter dissolves nicely.Then add sugar and mix well.


Occasionally stir in middle to prevent burning at the bottom.Keep cooking until you will get toffee colour it takes about 7 to 10 minutes to get that colour.
Mean while take a braking tray lined with parchment.

Once you get toffee colour i.e. light yellow golden colour then immediately add almonds flakes and mix well and remove from the hob.
Using two spoons drop the mixture into small balls on lined baking tray and allow it to cool.

In mean time take microwave safe bowl and add milk chocolate breaking into small pieces.Micro wave on full power for 1minute.
At this time almond brittle will be cooled downed.To this sprinkle the melted chocolate over them and allow few mints to set and then enjoy eating crispy and delicious Almond Brittle with chocolate..
