FOOD LOVERS turned Three, day before yesterday.I was very happy in celebrating my blogs birthday.Actually i started this blog with the support of my hubby dear,Without his support i would not have reached up to this stage.In the beginning i was not happy with my blog as i don't know to cook and at the same time i don't know how to take pictures for the food.But slowly i picked up with the support of my blogger friends by there valuable feed backs.In this occasion i thank each and every one for there support.I wish the same support from you all in future also..
I made Vanilla cup cakes to celebrate this occasion
Ingredients:
Egg-1no.
Milk-2tbsp
Raisins few
Sunflower oil-1tbsp
Plain flour-1cup
Sugar-1/2cup
Baking Powder-1tsp
Vanilla extract-1tsp
For Icing:
Butter-125gms
Icing sugar-125gms
Milk-1to2 tbsp
Preparation:
In a bowl,add all the above ingredients for making cup cakes and mix well without any lumps.
Using the two-spoon method with the two teaspoons, spoon the mixture into small muffin cases in a muffin tray.
Place the tray in a pre-heated oven at 200ÂșC fan for 12–15 minutes.
Once they are ready keep them wire rack to cool down.In mean the mean while we will prepare icing.
Take a bowl all the ingredients for icing and mix well into smooth spread ably paste.
Using knife spread the icing over the cup cakes and allow it to cool for few mints. Then Decorate with your favourite things..here i used stars to decorate it.
Today i made these Drop Scones for my breakfast.First time i have prepared it.It is very easy and goes delicious with golden syrup or butter n jam.Every thing will be done in 15mints.My two kids loved it very much.Here goes the recipe..
Ingredients:
Self-raising flour-125gramsMilk-125ml
Egg-1nos
Sugar-25grams
Salt a pinch
Baking powder-1tsp
Oil-1tsp
Preparation:
Take a bowl,add all the above ingredients expect oil and mix well untill small bubbles comes out. Heat a nonstick with oil on medium flame,once it gets warm using a spoon pour the mixture into the pan into small pancakes .Cook them on low flame until both sides turns into golden colour. Then transfer into a serving bowl and drizzle it with golden syrup and enjoy..
I made Kuskha yesterday night for my dinner along with egg curry.
I have tried and tasted this recipe from Prema's Thaligai.
The preparation very simple and easy.It tasted really very delicious.I followed the same procedure as Prema did.Here goes the recipe..
Ingredients:Basmati rice-2cupsWater-31/2cupsCurd/yogurt-1cupChopped onions-1big nos
Chopped tomato's-1 big nosSplit green chillies-2nosGinger garlic paste-1tspGhee-2tbspCloves,cardamom,cinnamon,bay leavesTurmeric powder-1/2tspChopped coriander leaves for garnishing
Salt to taste
Preparation:Wash and soak rice for 15mints,and drain.Keep it aside.
Heat a non-stick pan with ghee,add spices then goes chopped onions along with split green chillies. When onions are cooked well,add chopped tomatoes along with ginger garlic paste,turmeric powder,mix well.
Add curd and cook for 2minutes only.Then add the rice and mix every thing well. Pour the entire mixture into electric rice cooker along water and required salt.
When it is cooked add chopped coriander leaves and transfer it into a serving bowl and enjoy with Egg Curry..
Today i made Chili paneer for my evening snack.I thought of making it long back but i would not do it.But today i made it. It came really very well,when my hubby returned from the work we had hot- hot chili paneer along with coffee.Here goes the recipe..
Ingredients:Paneer-250gmsCapsicum-1nos(chopped length wise)Finely chopped onions-2medium nosGarlic-Ginger pieces-2tspChopped green chilies-2nosSoya sauce-11/2tspChili sauce-1/2tspTomato ketchup-3tspChili powder-1/2tspAjinomoto a pinchCorn flour-1tspOil-2tbspSalt to tasteChopped coriander leaves for garnishing
Preparation:First cut the paneer into small pieces .Heat a pan with little oil and fry the paneer cubes till they turn into golden colour.Once's its done remove the cubes and soak them in salt water and keep aside.In the same pan add the remaining oil,then goes chopped green chilies along with onions and fry them till they turn into light golden colour.Then add chopped capsicum and fry till it is cooked.Add all sauces,ajinomoto and stir well.Mean while drain the paneer pieces and keep aside.Now add chili powder along with drained paneer cubes and mix well.Add 1/2 of water and stir well.Take a small cup,add cornflour and little water and form a thin liquid.Now add this liquid to the cooking and mix well and cook till the gravy becomes thick.Once gravy becomes thick switch off the hob and garnish with chopped coriander leaves and enjoy!
Today i made Chicken Naag for my dinner which i have seen in YouTube.I don't know why they named it naag but when i saw it i was impressed and bookmarked it and prepared it.Its quite easy and it is gravy type we can have it with rice,rotis or even with idly or dosa.Here goes the recipe..
Ingredients:Chicken-1/2kg(medium size pieces)Potato-2small nosMustard+urd dal-1tspGinger garlic paste-1tspFinely chopped onions-1big Chopped coriander leavesOil-1tbspGhee-1tspSalt to tasteTo make paste:Tomato-2medium noscurd/yogurt-3tbspchili powder-1tspCoriander powder-11/2tspCumin powder-1/2tspGaram masala-3/4tspTurmeric powder-1/2tsp
Preparation:Clean and cut the chicken into medium pieces.Peel the skin of potatoes and chop into cubes.Take a mixer/blender grind all the ingredients to make paste.Pour this paste on to chicken pieces and mix well.Heat a pan with oil and ghee,add chopped onions along with salt and cook till onions changes into golden colour.Add the chicken pieces along with marination and mix well.Then goes potatoes,cook on high flame for 5mints stirring in middle.Then add required water and cook with closed lid for 10to15minutes.Once gravy becomes thick and chicken is cooked ,add chopped coriander leaves.Switch off the hob and transfer into a serving bowl and enjoy with rice or rotis...
After long time i made this Chickpeas-potatoes curry or kurma.It goes great with pooris,rotis or even with pulao rices.We had it with rotis,this time i added almond-cashew paste in the last and it tasted very delicious..here goes the recipe..
Ingredients:Chickpeas-1cup(here i used tin peas)Potatoes-5small nosChopped onions-2medium nosChopped tomato-1medium no.chili powder-11/4tspCoriander powder-11/2tspGaram masala-1/2tspCumin powder-1/2tspCumin seeds-1tspGinger garlic paste-1tspMustard+urd dal-1/2tspChopped curry leavesChopped coriander leavesAlmond+cashew nuts paste-2tbspTurmeric powder-1/2tspCloves-2nosOil-3tspSalt to taste
Preparation:Peel the skin of potatoes and cut into cubes.Microwave them with required water for 10min.Mean while remove the peas from the tin and wash under running cold water and keep aside.Heat a pan with oil,add cumin and mustard+urd dal,allow to pop them.Then add curry leaves,cloves.Then goes chopped onions along with little bit salt and fry till it changes colour.Then add ginger garlic paste along with chopped tomatoes,turmeric and cook till raw smell goes out.Once tomatoes are cooked,add chili n coriander powder and mix well.Then add peas n potatoes and stir well,so that all ingredients are nicely mixed.Then add garam masala n cumin seeds and required water and cook till the gravy becomes thick.When the gravy is almost done add almond-cashew powder and mix well.Finally add chopped coriander leaves and switch off the hob.Transfer it into a serving bowl and enjoy!

Yesterday was my daughter Lakshita's Birthday.So i planned to prepare Chocolate cake for her.This time she was very excited about her B'day and she got up early morning by 6AM.In the evening we had a party with some friends.She enjoyed a lot with her friends.I wouldn't take step by step preparation pictures of the cake as the whole day went busy-busy in cooking..
Ingredients:
Butter-225gms
Light muscovado sugar-225gms
Egg-4 beaten
Self-raising flour-175gms
Coco powder-25gms
For the butter cream filling:
Icing sugar sifted-200gms
Coco powder-25gms
Butter-50gms
Chocolate chips,to decorate
You will need:
2-8inch round tins,bases lined with baking parchment,
Preparation:
Heat the oven to 160C fan.Place the butter and sugar in a large bowl and beat together until smooth,light and creamy.Gradually beat in the eggs,a little at a time,until smooth,adding a little flour if the mixture curdles.sift the flour and coco together,and fold into the mixture with a metal spoon until smooth.
Divide the mixture between the 2tins and spread it out.Bake for 25 minutes until golden,risen and just firm to the touch.Allow to cool for 10minutes in the tin,then turn out and cool completely.
To make the butter cream filling,beat together the icing sugar,cocoa powder,butter and 1tbsp boiling water.
Sandwich the cakes with half the butter cream,then spread a little on the top.Then spread to the sides.Decorate cake with chocolate chips.
Today i made these Egg less chocolate Muffins.I have tried and tasted this recipe from Aipi of US Masala..Here i just changed the quantity of the ingredients and i have used Plain flour instead of All purpose flour.Remaining i have followed Aipi's method it self.It came really very well.
