Simple Chicken Fry

This weekend has very bad weather.All the two days it was windy,rainy n cold.We couldn't step out of the home.Both my kids got cold and Sathya has got more.He was not able to sleep properly in the night due to the cold.two days we stayed in the home looking after kids.

Coming to the recipe as i told sathya got cold too much,he wanted me to be with him for the whole day.so i thought of preparing simple and easy lunch for us on Sunday.Then i prepared this simple chicken fry which can be had with rice or roti's.


Ingredients:

Boneless chicken-250gms
Chilli Pwd-1tsp
Coriander Pwd-1tsp
Cashew nuts paste-1tbsp
Ginger garlic paste-1tsp
Onion-1big no.
Tomato-2medium no.
Clove-2nos.
Cinnamon-1inch no.
Cardamom-2nos.
Turmeric a pinch
Salt to taste
oil-2tbsp
Chopped coriander leaves few


Preparation:

First cut n clean the chicken into small pieces.

Chop onions,tomato's and keep aside.

Heat a nonstick pan with oil,add spices ,chopped onions and fry till the onions turns light golden colour.Add ginger garlic paste and again fry for few more mints till raw smell goes.Then add chopped tomato's along with chilli and coriander pwd and cook till tomato's becomes soft.

Add chicken pieces and stir well so that all the ingredients are well mixed with chicken pieces.cook on high flame for 10mints stirring in middle.

Simmer the flame and cook with closed lid for few mints or till chicken is cooked.Once chicken is cooked well add cashew nuts paste and mix well.Cook for few mints and finally add chopped coriander leaves.

Enjoy this chicken fry either with rice or rotis.

Tomato Karam Chutney

This Tomato Karam Chutney is my favourite one.My Amma used to make this karam especially for me,when ever she prepares dosa or idli and she does groundnut chutney for my younger ones.That time they used to tell my mother that she gives more important to me.When ever i remember these things i just laugh my self and i am missing them very much.

Yesterday i made this karam for dosa and it was yummy but i will not get that taste which my mother is to prepare.

Ingredients:

Tomato's-4medium
Onion-1medium
Red chillies-30r4nos.
Turmeric a pinch
Cumin seeds-1/2tsp
Ghee-1tsp
Mustard and urd dal for tampering


Preparation:

In a mixer add tomato's,chopped onion,red chillies,cumin seeds and turmeric.Run the mixer for few seconds or till all ingredients are nicely blended.

Heat a pan with ghee add mustard and urd dal,once they pop up add the grinded mixture and cook for few mints till the raw smell goes out.Then transfer into a serving bowl and enjoy with Dosa or Idli.

ShortBread Biscuits

These days what ever snacks i have been prepared was especially for my daughter laky.As she started going to school i have to pack her snack box as wellas lunch box.So i have too prepare in such a way that she will have her full snack n lunch with leaving any thing.

So yesterday i have prepared shortbread biscuits which are more liked by children.These biscuits are easy to prepare and it can be stored for a month .The ingredients needed for these biscuits are few things only which will be readly available in every house.


Mix flour and butter together

Add sugar and vanilla extract

Knead the mixture to form a dough

used cutter to cut the mixture

placed on bakingtray which is covered by baking paper


Ingredients:

Plain flour-1cup
Butter-40gms
Vanilla extract-1/2tsp
Sugar-1/2cup

Preparation:

Add the flour and butter together in the mixing bowl, then rub with your fingers.Until it becomes crumbly. Add half a teaspoon of vanilla extract to the bowl and then mix in the sugar.

Now knead the mixture into a ball with your hands until it all sticks together and sprinkle a clean surface with flour. Then roll the dough out flat with a rolling pin until it is about 1cm thick.

Now use a cutter to cut shapes out of your mixture and place them onto a baking tray that has been pre-covered with baking paper. You can re-roll the dough to cut more shortbread biscuits until it is all used up.


Place the tray in a pre-heated oven at 160ºC Fan for 12–15 minutes.


Once they are cool you can eat them, but not all at once!

Chow-Chow Sukhi Bhaji(T-T from Shanthi)

The school has started for laky from Friday onwards and my schedule became very tight.As i have get up early and make her ready for the school at the same time i have to look after sathya.She is more excited in going to school and she keeps on telling about what she has done in her class .even she called to her grandparents in india and told about her school and every thing.

Coming to the recipe this Chow-chow Sukhi Bhaji is tried n tasted from Shanthi of Shanthisthaligai,which came really yummy and tasted very nice.We had it with both rice n rotis.Thanks shanti for sharing such a wonderful recipe.

Ingredients:

Chow-chow)-2nos.
Sambar Pwd-1tsp
Tomato Puree-1tbsp
Coriander Pwd-1tsp
Turmeric a pinch
Cumin seeds-1/2tsp
Garam masala-1tsp
chopped coriander leaves a few
Salt to taste
Oil-1tbsp



Preparation:

Chop chow-chow into small pieces and keep aside.

Heat a pan with oil add cumin seeds and once they pop up add tomato puree and cook for few mints.Then add chopped chow-chow along with sambar and coriander pwds.Mix well and required salt,sprinkle water and close it with lid until chow-chow is cooked.

Once chow is cooked add garam masala pwd and stir well.Finally garnish with chopped coriander leaves and enjoy with rotis and rice.

Tomato spirals

Yesterday Laky was seriously watching Tv,that too a cookery show,and she called me to watch and asked me to prepare this tomato spirals.But i didnt had pastry pwd ready at home.Then we both went to shop and brought required things for making the spirals and it was quite easy to prepare and it tasted yummy n delicious.Especially she liked it very much.

Ingredients:

Puff pastry Powder-125gms
Tomato puree-2tbsp
Cheddar cheese-30gms
Oil for greasing

Preparation:

Take a bowl,add pastry pwd and required water to form a smooth dough.Then roll out the pastry into a nice big rectangle with a rolling pin until it is about the thickness of a 2mm. Use a blunt knife to spread a thin layer of the tomato puree all over the pastry. Make sure you spread it right to the edges.

Sprinkle the cheddar cheese on the top of pastry.Roll up the pastry into a long roll, hiding all the filling inside in layers.

Carefully cut the pastry roll into slices with the blunt knife. Lay the slices onto the baking tray lined with baking paper. The pastry may get squashed when you cut it so use your fingers to gently squeeze the spirals back to a round (roll) shape.

Put them into a pre-heated oven at 200ºC fan for 15 minutes. Once the Tomato Spirals have cooled down a little, eat them!

Naan (Indian Bread)

My little Sathya has recently completed his 1st birthday.On his birthday all the day was filled with happiness and he was more excited.As usually in morning we had pooja and prepared payasam,which we do regularly for birthday's.In the evening we had a cake cutting party.Actually we planned for photo cake unfortunately the machine was not working,later on we came to know that for 1st birthday we should not cut cake having his photo .He liked his cake very much and ate a small piece.

coming to the recipe i have prepared Naan(Indian bread) and chicken kurma for our Sunday's lunch.First time i have prepared this naan and it came really soft and hubby dear liked it very much and asked to prepare it often..it was quite easy to prepare.

This is the dough made with yeast,sugar,salt and milk.

Divide the dough into equal balls and make triangle shape by pressing with Palm

Place the Naan in baking tray and place it in oven to max.temp for 2to 3mins.In my oven i have max temp of 250degrees and i kept for 4mints


Once 4mints was done remove from the oven and reverse the Naan and place it for just 30seconds and then apply butter and enjoy soft and tasty Naan.


Ingredients:

All purpose flour-3cups

Instant dry yeast-1tsp

Milk-1cup

Oil-1tbsp

Salt to taste

sugar-1/2tsp

Warm water to knead

Butter-2tbsp


Preparation:


In A bowl take required warm water to that add dry yeast,sugar,salt and milk and mix well and set aside for 3mints.

Now add this water slowly to the flour to make a soft dough.And on the top of dough add oil and knead well.Set aside for 5mints.

Divide them into equal balls and make triangle shape by pressing with palm.

Now to make naan, set oven at maximum temp. Then place naan on baking tray and keep it into oven for 4mints and take out and flip it for 30seconds . After taking it out apply some butter on them. And they are ready to eat.

Note:According to your oven's temp adjust the time for making the Naan.As mine is 250 max i kept it for 4mints.

Salmon Steak Fish Fry

When ever Sunday comes it becomes very difficult for me to plan for the lunch.In week days it becomes very easy to prepare.This Sunday hubby dear brought this salmon steak fish which is more tasty then other fishes and quite costly compared to other.Hubby dear asked me to prepare fry.Then i got little relaxed because its easy to do fish fry.And i prepared this fry with in half an hour and it came really delicious .My Laky liked it very much and she ate 2pieces of fry without having any rice.


Ingredients:

Salmon fish pieces-4nos.
Ginger garlic paste-1tsp
Chili Pwd-1tsp
Coriander Pwd-1tsp
Corn flour-1tbsp
Lemon juice-1tbsp
Salt to taste
Turmeric -1/2tsp
Oil for frying


Preparation:

In a bowl mix all the above ingredients expect the fish.Then rub the mixture to each piece of fish both sides and place it in fridge for 20mints.So that all the mixture goes into the fish and fixes to it very well.once the 20mints is done.Fry one by one fish till they turn into golden colour on slim flame until all the fishes are fried.Once all the fishes are fried transfer them into kitchen towel so that any excess oil will be absorbed and then enjoy tasty fish fry.

Aloo Fry

Aloo fry or Potato fry is prepared in my kitchen after a long gap.Yesterday my hubby dear reminded me to cook this aloo fry.Its easy to prepare and tasty to eat.This fry can be served with rice as side dish and with rotis it goes great.Coming Thursday is my little Sathya is going to celebrate his 1st birthday and we planning to celebrate greatly.If we are in India means he would be celebrating his day with all his Taata's,Nanamma ,Ammamma and relatives.But now he has to celebrate without them,but there wishes will be with him forever.

Ingredients:

Aloo/Potato's-250gms
Amchur Pwd-1tsp
Garam masala Pwd-1/2tsp
Chilli Pwd-1/2tsp
Crushed Garlic pods-3nos
Onion-1big
Cumin seeds-1/2tsp
Mustard and urd dal-1/2tsp
Oil-1tbsp
Salt to taste

Preparation:

Clean n cut potato's in your desired size and boil with a pinch of turmeric,so that it cooks fast.Then chop onions and keep aside.once the potato's are cooked remove the outer skin.

Heat a pan with oil,add cumin seeds and mustard once they pop add chopped onions and fry till they change there colour.

Add cooked potato's along with chili,garam masala pwds,salt and turmeric and stir so that all the ingredients are nicely coated to the potato's.Finally add amchur Pwd,stir for a mint and remove from the hob.

Transfer into a serving bowl and enjoy.

Carrot Muffins

These Carrot muffins really tasted very delicious and yummy.I have prepared this muffins with in an hour and my kids loved it very much.These days my laky is asking me to prepare different varieties of snacks for her.Now i am in search for new recipes for her,as her school is going to start from next week, from onwards i am thinking what to pack for her lunch n snacks.She likes only curd rice.Now i have change her habit.Hope all my blogger friends have enjoyed there weekend happily.


Ingredients:
Unsalted butter-110g/4oz
Caster sugar-110g/4oz
Eggs-2nos

Baking powder-1tsp
Self-raising flour-110g/4oz
Grated Carrot-1cup


Method:
Preheat the oven to 220C/425F/Gas 7.Place around eight muffin cases into a muffin tin.Place the butter and sugar into a food processor and blend together.

Add the eggs, baking powder and flour, then slowly combine without any lumps.Pour the mixture into a large bowl and stir in the carrot.


Divide the mixture between the muffin cases.Bake in the oven for 12-14 minutes, or until well risen and golden brown.
Serve warm or cold.
