Unsalted butter-110g/4oz
Caster sugar-110g/4oz
Eggs-2nos
Baking powder-1tsp
Self-raising flour-110g/4oz
Grated Carrot-1cup
Preheat the oven to 220C/425F/Gas 7.Place around eight muffin cases into a muffin tin.Place the butter and sugar into a food processor and blend together.
Add the eggs, baking powder and flour, then slowly combine without any lumps.Pour the mixture into a large bowl and stir in the carrot.
Divide the mixture between the muffin cases.Bake in the oven for 12-14 minutes, or until well risen and golden brown. Serve warm or cold.
